Recipe: Blueberry Lemon Muffins

Light and tasty, these Blueberry Lemon Muffins will make your mouth water! With a smooth and sophisticated flavor, this sweet dish is a perfect surprise for an afternoon coffee or breakfast and will make any snack tastier and more aromatic.

  • 4 eggs
  • 120 g blueberries
  • Wheat flour (for dusting)
  • 1 and 1/2 cup of wheat flour
  • 3/4 of a tea cup of butter
  • Zest of 2 Sicilian lemons
  • Juice of 1 Sicilian lemon
  • 1 tea cup of sugar
  • 1 pinch of salt
  • 1/2 tea cup of milk
  • 1 tablespoon of chemical baking poder

How to prepare:

  1. In a bowl, separate the clean and dry blueberries, sprinkle some wheat flour and set aside.
  2. In a mixer, place the butter, the lemon zest and the sugar. Beat it for approximately 4 minutes.
  3. With the mixer running, add the eggs and beat it until it becomes smooth.
  4. Turn off the mixer and add the wheat flour, the salt, the milk and the lemon juice. Mix it with the help of a fouet.
  5. Add the blueberries and yeast and mix gently.
  6. Place the dough in the molds.
  7. Bake it in a preheated oven at 180°C for 40 minutes or until the toothpick comes out clean.
