Recipe: Blueberry Lemon Muffins

Ingredients:
- 4 eggs
- 120 g blueberries
- Wheat flour (for dusting)
- 1 and 1/2 cup of wheat flour
- 3/4 of a tea cup of butter
- Zest of 2 Sicilian lemons
- Juice of 1 Sicilian lemon
- 1 tea cup of sugar
- 1 pinch of salt
- 1/2 tea cup of milk
- 1 tablespoon of chemical baking poder
How to prepare:
- In a bowl, separate the clean and dry blueberries, sprinkle some wheat flour and set aside.
- In a mixer, place the butter, the lemon zest and the sugar. Beat it for approximately 4 minutes.
- With the mixer running, add the eggs and beat it until it becomes smooth.
- Turn off the mixer and add the wheat flour, the salt, the milk and the lemon juice. Mix it with the help of a fouet.
- Add the blueberries and yeast and mix gently.
- Place the dough in the molds.
- Bake it in a preheated oven at 180°C for 40 minutes or until the toothpick comes out clean.
