Peixe branco com uvas frescas
Ingredients
2 white fish fillet(s) with black pepper and salt
20 gram(s) of cooked carrot cut into chips
20 gram(s) of zucchini cooked and cut into chips
20 grams of boiled cassava cut into chips
20 gram(s) of boiled potato cut into chips
20 gram(s) of broccoli
20 gram(s) of cooked green beans cut into chips
Fish sauce ingredients
1 tablespoon of butter
1 tablespoon of wheat flour
1 tablespoon of sugar
½ cup of orange juice
½ cup of lemon juice
10 gram(s) of rolled almonds
6 grapes
Method of preparation
Sauce
Melt the butter in a pan and add the flour, stirring vigorously so as not to form lumps. Add sugar, orange juice and lemon juice and stir. Transfer sauce to blender and blend until smooth. Add almonds and grapes and set aside.
Sole
Season the fillet with salt and pepper. Grill both sides. Place the steaks on a plate along with the vegetables. Drizzle with the sauce and serve.
