Frango com manga à moda indiana
INGREDIENTS
6 servings
1 kg of chicken drumsticks
3 very firm ripe mangoes
2 diced red onions
2 finely chopped garlic cloves
1 cube of chicken broth
300 ml of water
200 ml of coconut milk
4 tablespoons of oil
1 tablespoon of turmeric or saffron
Pinch cinnamon powder
Pinch cumin
1/2 pack of fresh coriander
Salt and black pepper to taste
METHOD OF PREPARATION
Heat the oil in a pan. Fry the chicken drumsticks over high heat until golden. Then add the onions, garlic, turmeric, cinnamon and cumin. Mix well and correct seasoning with salt and pepper to taste.
Then add the chicken stock, mix and cook for 30 minutes over low heat, with the pan covered.
Meanwhile, peel the mangoes and cut them into strips or large cubes. After 30 minutes of cooking, add the fruits to the preparation, cover and continue cooking for another hour.
At the end of cooking, add the coconut milk and mix well to incorporate the flavors.
When serving, sprinkle with chopped fresh coriander and good appetite!
